Our challenge at the end of the day is always to sit down to eat dinner in a timely fashion so that our little guy won't have to go straight from the dinner table into bed, which means that things we used to enjoy for dinner, like baked potatoes, were off the menu. I know, you can microwave 'baked potatoes,' but I don't like how the skin turns out with that method.

I should mention that I also took a half a pack of bacon out of the freezer to thaw in the fridge during the day.
Upon returning home, I took out my baking sheet and prepared my bacon in the oven, as described in this post. By the time my bacon was finished cooking, I had the cheese shredded, sour cream on the table, and our side of green beans steamed and ready to go - dinner was ready within 25 minutes of stepping in the door - and in that time I actually had time to load the dishwasher and wipe down the counters!
