Easy Taco Salad

Whenever we think about doing tacos, we always end up with taco salad.   Much less messy, easier to add extra veggies into, and makes the meat go farther. 
Really simple instructions:

Brown some ground beef & onions.  Drain.  Add some taco seasoning if you have some. (I didn't this time, so I just added a bit of spicy salsa right to the meat).

In a large bowl, combine half a head of shredded lettuce, some tomatoes (canned or fresh), and a bag of  taco chips (I crush them slightly before adding, so they're in bite-sized pieces), and toss.

Add the ground beef, some shredded cheese, and then some salsa and sour cream to taste.  Toss to combine.  It tastes great right away, when the chips are still crunchy, but it's also great as leftovers or brought along for a picnic!

    1. I was thinking of that, Bethany! I'd say to fry up some beans with some taco seasoning, maybe? That could be good!
