Easy Microwave Peanut Brittle


I've always loved peanut brittle, but I couldn't be bothered to do all the boiling, waiting, and checking temperature.  I came accross this recipe from my mom a number of years ago.  It is so incredibly easy and it tatses great.  It may be good for older kids to help with, but it gets REALLY hot in the microwave, so I'd be very careful.

Ingredients:
1c. white sugar
1/2 c. corn syrup
1c. unsalted peanuts
1/8 tsp. salt
1T. butter or margerine
1 tsp. vanilla
1 tsp. baking soda.

Grease a cookie sheet or line it with parchment paper.

Combine the sugar, syrup, peanuts and salt in a microwavable bowl.  I like to use my big 8 cup Pyrex measuring cup, because it has a handle on it, so I don't have to touch the hot bowl.  Microwave for about 4 minutes.  Stir well, microwave for another 2 minutes.

Add the butter, stir well, microwave for another 2 minutes.   Stir in vanilla and baking soda, mix well.

Pour quickly onto the baking sheet, spreading it as you go.  It cools and hardens quite quickly, so you need to work fast.  I prefer having it pretty thinly spread, so it's easier to bite when it cools.  Cool in the fridge for a few hours.  Break into pieces and enjoy!

  2. I don't know much about splenda, but I know that this peanut brittle depends on the boiling and solidifying of the sugar, so I'm not sure about the splenda. You can always give it a try, though.

  3. I do these with pecans. I add the pecans after the first 4 mins. Delish!
