Healthy Waffles!

I love having waffles at special occasions  - birthdays, Christmas, holidays, but I liked them especially when they were very unhealthy - white processed flour, lots of oil. Mmmm.   But in the spirit of healthy eating, I thought I'd try this recipe from allrecipes.com.  It boasts large amounts of healthy ingredients: whole wheat flour, flaxseed, wheat germ, and applesauce.  There is a bit of white flour and a bit of oil, but not nearly as much as other recipes.

It calls for whole wheat pastry flour - I just used regular whole wheat flour.  I used a little more applesauce and a little less oil.  I also added a teaspoon of cinnamon for extra flavour.  I doubled the recipe, because we eat a lot and we like having leftovers. They actually taste pretty good  warmed up in the toaster.

The best part about this is that it doesn't really taste extremely healthy.  They are delicious, especially with a bit of syrup, yogurt or applesauce.  The waffles stay fairly crisp while waiting - I like to put mine in the toaster for a few seconds, and it's perfect.
