Home Made English Muffins

I really, really love English Muffins.  So, when I saw this recipe for home made English Muffins this week on Pinterest, I knew I had to try it out!  It takes several hours to make, due to the fact that the dough has to rise three times before going into the oven, so a Friday morning at home with just my little guy seemed like a perfect time to give it a go! 
This was my second time this week making bread products on the stove top (see the Crumpets entry below!) and it's a really neat way to 'bake'!  I have to admit, I was hesitant about how they'd turn out - before cooking them on the stove, they certainly didn't look like English Muffins!  However, after the first flip, I knew they'd be great.  They look like store bought English Muffins, and they taste terrific!
The author of the Budget Bytes blog suggests doubling the recipe when making, since it takes so long to make the recipe.  I didn't take her advice yesterday, since I wanted to make sure it was going to turn out ok in the first place, but after using them to make mini-pizzas last night for dinner, I only have 4 let - I should have doubled the recipe!  Next time.  And there will be a next time - this one is going to become a regular in my house!
