Single Serve Peanut Butter Chocolate Chip Cookie Dough

I, like many children, loved eating spoonfuls of cookie dough when I was little...sooo good!  But eventually I realized that we were eating the raw eggs as part of it, and I just couldn't let myself eat that anymore.  So when I saw this pin for safe-to-eat, eggless cookie dough, I was very interested.  Aside from just eating it from a bowl, you could eat it with ice cream, use it as a dip with graham crackers, or even add it to another recipe!

Her original recipe looked great, but I made some changes to it, making it slightly healthier, and a bit of a different taste.


I took a small bowl, mixed 1 Tbsp of peanut butter with 1 Tbsp coconut oil. I added 3 Tbsp whole wheat flour, 1 1/2 Tbsp brown sugar, 1/2 tsp vanilla and 1 tsp of milk. Mix it well, add a bunch of chocolate chips (I used dark chocolate chunks...mmmm).
This really tasted as good as real cookie dough, with none of that salmonella worry.  It's a real problem, though, to know that I am at any time just two minutes  away from some peanut butter chocolate chip cookie dough...
