As I continue to try to make healthier choices, I'm always thrilled to find a healthy snack that tastes like it's not healthy. These potato chips taste like real potato chips, except that they have no fat and just a little salt!
Take one medium potato. Either scrub it or peel it. Slice it with a mandoline slicer at the thinnest setting. Cut a circle of parchment paper to fit onto your microwave tray. Arrange the slices in circles. Microwave for about 4 minutes. Check for doneness, and microwave in 2-minute intervals until they are crispy and done.
Some may be done before others - remove those that are crisp and brown. My entire tray took about 8 minutes. They taste delicious alone, but I was craving something a little more interesting, so I drizzled a little bit of vinegar on them, and sprinkled some salt on top.
Mmmmm!! No fat! Very little salt!! No processed ingredients! Great for kids, too! And ready in 10 minutes start to finish!
I've tried it with sweet potatoes too - they were also delicious!
Note: the first time I tried this, I wanted to make 2 potatoes worth. Unfortunately my microwave couldn't handle that and overheated. It was fine about a half an hour later, but now I know to try only one at a time...too bad since they get eaten so quickly!

DeleteI tried sweet potatoes on Tuesday, and they were incredibly delicious! My only problem was that our microwave cooks hot, and the sugar in the sweet potatoes meant that they were quicker to burn.... Need to be very vigilant with those!! Looking forward to trying regular potatoes!
ReplyDeleteTip: if you have a small clean spare spray bottle, put your vinegar in there, and you'll get a more even, thin coating of vinegar on the foods you want to flavour!
Good idea about the spray bottle - that way they won't get soggy!
