"I Can't Believe it's Not Ice Cream!"

It looked too easy - ice cream made from four frozen bananas processed in the food processor until it became smooth and creamy. Add a scoop of peanut butter, some cocoa powder and it's done.  And it's supposed to taste like ice cream?

I tried it with 2 of my kids. They loved pulsing the food processor, and of course, licking off the spoons! End result looks just like the picture on the blog, and tastes pretty good for fat-free, low sugar ice cream! I would add some mini chocolate chips or some chocolate sauce to mask a bit of the banana flavour, but it's a quick, easy dessert that we will enjoy again!

This was about 6-8  very ripe bananas.  Cut them into chunks before freezing them. The original post calls for about 4 or so, but our family can go through a LOT of this!


Pulse and process until creamy. Add a scoop of peanut butter and a tablespoon of cocoa (both are optional, but they tone down the banana flavour).
Freeze for several hours until solid.  Let sit at room temperature for about 15 minutes before serving.

Top with some homemade chocolate syrup, or any toppings you prefer.  We served this to friends of ours and didn't say what it was.  They thought it was delicious, and I told them it wasn't ice cream at all!  Non-dairy, low sugar, low fat.   They made it for family and friends, and called it "I Can't Believe it's not Ice Cream!"
So good, and definitely satisfies the ice cream craving!

  1. We love this at our home, too! For our smaller family of 3, 2-3 bananas works great, and we like to enjoy it as 'soft serve' ice cream, so we serve it pretty much right away. I add peanut butter and a handful of chocolate chips, and leave out the cocoa.
    What a delicious and guilt-free treat for a pregnant woman such as myself! ;)
