Turkey Cranberry Ring

 
While our friends south of the border are preparing for Turkey Overload, we up here in Canada have been finished with Thanksgiving for over a month now.  I squirreled away some of the leftover turkey in the freezer, and while I love turkey and gravy sandwiches, I wanted to find something a little more creative for the final container when I took it out of the freezer.

I happened upon this recipe from The Pampered Chef - Turkey Cranberry Wreath, via FantasticFamilyFavourites.  It seemed straightforward enough, so I gave it a try (with a few changes since I didn't have all of the ingredients) - and we all loved it - Oma, Daddy, Mommy, and the ever-pickier little toddler!

Here's the recipe with my changes:

Turkey Cranberry Ring

  2 pkg refrigerated crescent rolls
1/4 cup mayonnaise
1/4 cup sour cream
2 T honey Dijon mustard
1/2 tsp coarsely ground pepper
2 cups cooked turkey, shredded
1 cup steamed broccoli florets
1 carrot, shredded
1 tsp dried parsley
1 tsp thyme
1 clove of garlic, minced
1/2 cup dried cranberries
4 oz. cheddar cheese, shredded (1 cup)
1 egg white

1. Preheat oven to 375°F.
2. Unroll crescent dough into 16 triangles. With wide end of triangles toward the center, arrange 8 triangles in a circle on a pizza pan or stone. Corners of the wide ends will touch and points will extend 1 inch beyond the edge of the pan. Lay they remaining 8 triangles in the opposite direction with the points toward the center and the wide ends between the other 8. (See below for photos)
 3. Combine mayo, sour cream, mustard, pepper, turkey, broccoli, carrots, parsley, thyme, garlic, cranberries, and cheese. Mix well until combined. Spread turkey mixture in a ring around center of crescent rolls.
4. Fold over crescent dough alternating outside and inside points, tucking ends under. Brush with egg white. Bake 25-30 minutes.
Yields 10 servings.<--- Only if you're serving other dishes along side this - we found that this made 4 comfortable servings for us as a solo dish.
