We love French fries in this house. Of course, the best are the real deep fried ones. We also enjoy the frozen ones. But I have recently discovered the tricks to making the best ones yourself - crispy and delicious!
First I scrub them and leave the skins on (if it is not too thick). Then I use this wonderful dollar store item that I found years ago, and mentioned in my What to Do With 10lbs of Carrots post. It slices the potatoes into either chips or fries - and it works faster than a knife. They actually end up looking just like the frozen ones!
Then you soak them for at least 30 minutes in very cold, salted water. This step apparently removes some of the moisture and results in crispier fries. (I first mix some salt with a bit of hot water to dissolve it, then add very cold water). Drain and dry on a towel
Spread onto one or two cookie sheets - I like to line mine with parchment paper. Drizzle with one or two tablespoons of olive oil. Use your hands to massage the oil into the fries.
Bake at a very high temperature, 450, stirring every 10 minutes. I find the baking time varies from between 20 to 30 minutes, so I just set timers for 10 minutes at a time.
Sprinkle with salt after, and enjoy! I love how minimal the ingredients are - just potatoes, a bit of oil, and as much or as little salt as you would like to add. They look great, and taste amazing!
These look absolutely yummy! I have a question, though. How do you get them crinkle cut? My husband has done most of the cooking for years, but I'm thinking about getting back in the kitchen.

Hi Leslie! You can buy crinkle cutters (often at dollar stores) or specialty kitchen stores. I highly recommend them - I use mine all the time! (for carrots too!)
