My little man is not yet 3, but I'm doing my best to get him helping me in the kitchen with something almost every day. He doesn't do a lot yet - dumps measuring cup-fulls of ingredients into the mixing bowls, helps me stir things together, etc - but I want to expose him to these things now so that he'll be comfortable in the kitchen later. (I am totally planning on giving him a night to make dinner when he's older - I don't care if it's Mac & Cheese, Hamburger Helper, or mini pizzas on english muffins! He'll be helping out!) The great thing about these treats is that Rice Krispies are Gluten Free and almost all marshmallows are Gluten Free, so without even trying, Rice Krispie Treats are Gluten Free! Hurrah!
Anyhow, I haven't done Rice Krispies Treats with him yet, and it seemed like the perfect thing to make today to try out another Halloween snack.
We made the treats as directed on the box, but cut the recipe in half - we have no need for a whole recipe in our house yet, I'll just eat it all! We did it on the stove as opposed to using the microwave because a) I don't have any good microwavable bowls right now and b) our microwave is very powerful and I tend to burn things like sugar & chocolate in it.
After the butter & marshmallows were melted & mixed together, I added a little red food colouring and a LOT of yellow to get a nice orange colour. Then we added the Rice Krispies, and mixed it all together. Instead of spreading them out in a pan, we put a large sheet of wax paper on the counter, dumped out the gooey orange mess onto the wax paper, and then put another large sheet on top. We used a rolling pin to flatten & thin it out, and when we had a layer of Rice Krispies about 1/2"-3/4" thick, we stopped.
After chilling them in the fridge for 30 minutes, we peeled back the top layer of wax paper & used a cookie cutter to cut out little pumpkins.
Except, we don't have a pumpkin cookie cutter.
So, I used the old Spade cookie cutter that I picked up at a thrift store in the summer, and then just cut the bottom off of it! Brilliant, no? (Well, at least *I* was proud of myself!)
Once you've cut out your pumpkins, use black decorating gel (I use Wilton's) to turn your pumpkin treats into Jack-o-Lantern treats. If you want. Happy Halloween! Skip the decorating for special Thanksgiving treats for the kids!
