Tuna Dippers

We've been making these for years - they are such an easy meal (especially if you've forgotten to take meat out to thaw!), and it is a great way to sneak extra veggies to your kids. We often make it as part of a dipping supper (all finger foods, all dippable) - the kids love it! This is a great alternative to chicken nuggets or fish sticks. 

Again, my amounts are always somewhat improvised, so I'm not very precise.

Ingredients:
1-2 c. shredded carrots (I usually shred them, then run them through the food processor again to chop them finely)
1 onion chopped finely
1 can of tuna
2 eggs
1 c. bread crumbs
a squirt of ketchup or BBQ sauce, and salt/pepper to taste


1. Combine the veggies in your food processor with the blade attachment - the finer they are, the less they'll be noticed!

2.  Add the tuna and eggs, process well.

3.  Add the bread crumbs and any desired seasonings (ketchup, BBQ sauce, salt, pepper).

To form the patties, either shape by hand or (depending on how sticky the mixture becomes) scoop with a spoon and shape on the cookie sheet.  Bake at 350 for about 20 minutes, or until the tuna dippers are solid enough to lift off the tray.


In the past, we've also added:
  • shredded cheese!
  • spinach, peppers, or other veggies
  • a box of stuffing mix instead of the bread crumbs - this was delicious!
We've also shaped them into patties, and made them into Tuna burgers.  Everyone loved them!
