Amazingly Simple Microwave Peanut Brittle

I know I posted this recipe two years ago, but it's so great that I wanted to share it again!  When I think of peanut brittle, I usually think of boiling and sugar and candy thermometers...too much work. This recipe is done in less than 10 minutes in the microwave - SO easy!  And it tastes really good!

Ingredients:
1c. white sugar
1/2 c. corn syrup
1c. peanuts (not roasted)
1/8 tsp. salt
1 Tbsp. butter
1 tsp. vanilla
1 tsp. baking soda


1. Combine sugar, syrup, peanuts & salt in a microwavable bowl (I like my 8c. measuring cup because it has a handle that doesn't get very hot).  Microwave for 4 minutes, and stir.  Microwave for another 2 minutes, and stir.
2. Add butter.  Microwave for another 2 minutes.  Stir in vanilla and baking soda.

3. Spread quickly onto parchment-lined cookie sheet (or heavily greased sheet).  Cool for at least an hour.

(Put your bowl into hot soapy water immediately and let it soak).

4.  Break into pieces and enjoy! 
 
Told you it was easy!!  Makes for a great neighbour gift or teacher gift!  Goes well at parties too!
