Ingredients:
1c. white sugar
1/2 c. corn syrup
1c. peanuts (not roasted)
1/8 tsp. salt
1 Tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
1. Combine sugar, syrup, peanuts & salt in a microwavable bowl (I like my 8c. measuring cup because it has a handle that doesn't get very hot). Microwave for 4 minutes, and stir. Microwave for another 2 minutes, and stir.
2. Add butter. Microwave for another 2 minutes. Stir in vanilla and baking soda.
3. Spread quickly onto parchment-lined cookie sheet (or heavily greased sheet). Cool for at least an hour.
(Put your bowl into hot soapy water immediately and let it soak).
4. Break into pieces and enjoy!
I love the simplicity of this recipe. I'm a fan of peanut brittle, but never imagined I'd be able to make it myself. Bookmarking the recipe - thank you!
