A Taste of Summer: Mint Lemonade Slushie

So how 'bout that weather here in Southern Ontario this month?  If there's one adage that I've learned to be true this month, It's not the heat, it's the humidity!  Now thankfully, my mom and my sister and I left the province for the East Coast near the beginning of the recent heat-wave, and returned to gorgeous - can I say that again? - gorgeous and incredible weather.

22, 25, even 29 degrees without a hint of humidity is AH-MAZING.  I can cook, clean, bake, play - without breaking (much of) a sweat and the windows remain wide open!

It's been a while since I've posted, and that's mostly thanks to the aforementioned vacation - there was a lot of running around getting the house ready to run for a week without me (sounds very self-centred, doesn't it?) - cooking meals for the freezer, writing pages of notes for the babysitter and for the husband, stocking the fridge, cleaning the bathroom, getting the laundry caught up....  And then upon my return, I've been rather computer-less, since DH has had a lot of business to take care of from his home office.

No matter.  I'm here now.  And I have to share with you my favourite refreshing drink recipe.  It's non-alcoholic, which is perfect since one of my good ladies is quite advanced in her pregnancy, so I can share with her. We actually discovered this drink together at a small deli / restaurant in the Village in Montreal at the end of May on a very, very hot day.
(This is where I would have put a picture of the incredibly tasty drink that inspired me to make this slushie at home, but somewhere along the line, the folder of pics that I took in Montreal disappeared off of DH's computer.  Hmmm.)

Mint Lemonade Slushie (serves 2)
Ingredients:

  • 2 cups of ice
  • 1/3 cup fresh mint leaves
  • 2 1/2 cups prepared lemonade
  • 2 chilled glasses
Put ice in blender and pulse for a few seconds.  Add remaining ingredients and blend for about 1 minute, or until ice is thoroughly crushed and mint is fairly pureed. Pour into tall, chilled glasses and enjoy. 

Feel the heat & humidity melt away.
