Cauliflower Tater Tots - Low Carb, Gluten Free!

As I continue my journey into wheat-free cooking for my dear little guy, I find that there seems to be no end to new recipes to try on Pinterest.  The latest was an imitation Tater Tot recipe - made with cauliflower!  Find the inspiration for my post here.  The brilliance of this recipe is that it has 2 ingredients: 1 head of cauliflower and 1/2 cup Parmesan cheese.  I made it into a 4 ingredient recipe and added a bit of salt and garlic to taste.
I quartered the cauliflower and microwaved it for 6 minutes.  I then tossed it into the food processor and set it on high for about 5 minutes.  The resulting product was almost the consistency of mashed potatoes.  I added my salt and garlic and mixed it all together.
This next step takes a while.  Like, so long that I think I may forgo the cute tater tot-like cylinders next time and just put them into a mini muffin tin.   I did pass the time watching Master Chef.  Love that show, so happy it's back for another season!  However.  This time around, I scooped up about 2 Tbsp into my hands, rolled them into a ball, and then flattened two ends and rolled the middle to make the cylinder shape. 
After I shaped each cauli tot, I rolled all sides in Parmesan cheese until it was generously coated, and placed on a parchment paper lined baking sheet.  When all of the tots are formed, put the baking sheet in the freezer.  If you're going to bake them right away, then 15 minutes in the freezer will be fine to help them hold their shape.  If you plan on putting them in the freezer to bake at a later time, make sure they're frozen solid before you take them off the sheet to bag them in a freezer bag.  
Bake at 400 degrees F for 10 minutes or until golden and crispy.  Enjoy!

  1. We make faux-tatoes all the time with cauliflower - I puree the steamed potatoes and add milk, butter, garlic and salt/pepper just like real mashed potatoes.
    This sounds like a fun variation - I might try once cauliflower is in season...

  2. I love cauliflower, hubs hates it. Do you think i could use frozen and thaw it, to get the same effect? I would love to fake him out!
