Christmas Morning Breakfast: Super Apple Bake

 A few weeks ago when I was visiting my mom with the kids, I went through her recipe box and took photos of my favourite recipes that my mom used to make when I was growing up.  I went in there looking for one in particular, which was this one, the Super Apple Bake.
I'm not entirely sure where the recipe originated - my guess is that it was published in Canadian Living, but I can't be sure.  My apologies to the creator of this recipe for not giving credit - I would if I knew who you were! 

Anyhow, I felt that this one needed to be shared - I've searched for and tried many recipes with the same types of ingredients, but none of them gave this result - it's a 'sweet' custard-y egg dish that's not too sweet!  Between the sugar in the dish and the sugar on the dish, there's only 6Tbsp, which is about 1/3 cup - I cut the amount of sugar in half, and it was still tasty.  My husband is a big 'meat & eggs' guy when it comes to breakfasts - the less sugar, the better.  I, on the other hand, love waffles and pancakes, and all that accompanies them -syrup, jam, powdered sugar, brown sugar, fruit sauces....  Anyhow, this Super Apple Bake is a great compromise, because it's fairly hearty, it's a little fruity, and when you cut the sugar down and skip the syrup, it's really not sweet!  If, however, you're like me, and you're into the sweet side of life, maple syrup or table syrup is a fantastic addition to this breakfast.  Yum.  I might make it again tomorrow morning.  (when I cut the recipe in half this morning, it made a pleasant amount to be shared by two adults and 1 toddler.)

Super Apple Bake
3Tbsp Butter
4 large apples, peeled, cored, & sliced
6 eggs
1 1/2 c milk
1 c flour
3 Tbsp sugar
1 tsp vanilla
1/2 tsp salt
1/2 tsp cinnamon
3 Tbsp brown sugar

  1. Melt butter in 13x9 dish in 425 degree oven, about 3 minutes.
  2. Arrange apples in single layer in the melted butter - bake for 5 minutes.
  3. Beat remaining ingredients except for the cinnamon & brown sugar, and pour egg mixture over apples.
  4. Sprinkle with cinnamon & brown sugar.
  5. Bake 20 minutes or until puffed & golden.  Serve warm with syrup (or not).
