I'd seen before that you can replace pumpkin puree (not pumpkin pie filling) for mashed bananas in recipes, so I thought I'd give this recipe a whirl with substituting pumpkin for most of the banana. The result was delicious and filling - fortunately for DH, there were a few leftovers which he promptly scarfed down & declared this recipe to be my best yet. (He is, as you probably don't know, a great lover of pumpkin pie.)
I'm not going to lie - these pancakes would make the perfect breakfast/brunch on Thanksgiving day! Or, if you don't feel like making supper after that big lunch, and you want just a little something to eat, whip a batch of these up!
{GF} Banana Oat Pancakes
Makes ~12 4" pancakes.
Ingredients:
- 6 eggs
- 1 banana - spotted or brown
- 1 cup pumpkin puree (not pumpkin pie filling)
- 3/4-1 cup oats, ground in a coffee grinder or blender
- 1-2 Tbsp honey (depending on your sweet tooth)
- 1/2 tsp vanilla
- 3/4 tsp salt
- 1/2 tsp pumpkin pie spice
- handful of mini chocolate chips, if desired
- 1tbsp coconut oil or butter
- Whipped cream for serving. I did not have this. You should.
Directions:
- Beat eggs, banana & pumpkin puree together in a large bowl until well combined.
- Add remaining ingredients & mix on medium until very well blended. Let batter sit for 5-10 minutes.
- Heat pan on stove over medium-low heat, add some coconut oil or butter.
- Pour batter onto heated greased pan in 1/4 cup portions. Let cook for about 3-4 minutes, then flip & cook for another 3 minutes.
Serve with butter or coconut oil. If you like it sweeter, add a touch of syrup. I was hoping to serve these with whipped cream, but didn't have any in the cupboard. I would strongly advise that you do, because these taste so much like pumpkin pie that they just beg for whipped cream!
