Broccoli Salad

We love broccoli salad here.  We can easily go through 2 heads of broccoli in one meal!  I love all the little add-ins you can put in the salad, and it tastes best when everything is chopped up nice and small.

Ingredients:
1 large head of broccoli
1/2 c. shredded cheese
1 apple finely diced
1/2 of an onion, finely diced
1/3 c. each of raisins, sunflower seeds, bacon bits
Dressing:
1/2 c. mayo
1/4 c. sugar
1/4 c. vinegar
Combine the first ingredients in a bowl.
In a separate small container, combine dressing ingredients, whisking away lumps.
Pour dressing over salad. Enjoy!

The nice thing is that you can omit any of the add-ins or be creative and add some others (real bacon, cranberries, other nuts or seeds).

  1. Oh my gosh, these look amazing! I heard on the radio yesterday that they are going to start using brocolli cells as a protection for healthy cells during chemotherapy, so eating this will also help in the fight against cancer. Great post. Amanda HelmiBM visiting from UBC. :)
