Fudgy Brownies - no flour, no sugar!!

MR - In my ongoing quest to eat healthier and to feed my growing boys healthy foods, I've been intrigued by some recipes on Pinterest.  These flour-free brownies have been making the rounds, so I thought I'd check out this one by Scarletta Bakes, Black Bean Brownies

The pictures looked great and the comments from readers were very positive, so I gave it a try.  You don't need very many ingredients - no flour/flour substitute, and no sugar - just honey.  The batter, before baking, is a soupy mess and I was a little concerned.  But somewhere along the way it becomes a moist, fudgy brownie.

I had cut the amount of butter in half (I couldn't justify having 1 cup of butter in it) and I added some peanut butter on top to mask any strange tastes/textures.  If I had chocolate chips, I would have added some too. 
The result?  Rich, moist & very tasty.  I would have baked it a little longer - the edge pieces were nicer than the rest (though the boys loved it all).  It would also work well in mini-muffin tins.  I would also recommend that the beans get processed very well so there is no strange texture in the brownies.
I didn't actually tell anyone that the main ingredient was black beans...and no one would have guessed.  I don't think that I would make these for a party or anything, but they are a great (secretly healthy) snack to make for your kids!!

I made a very similar recipe last week, but I melted some mint chocolate chips and spread them on top to give them a 'richer' taste (I can still discern the beans and the healthy aspect, otherwise...).... My favourite way of having them was how I did them for dessert one night - I warmed them up in the oven, then served with strawberries & whipped cream - they tasted like a fudgy restaurant dessert!
