MR - In my ongoing quest to eat healthier and to feed my growing boys healthy foods, I've been intrigued by some recipes on Pinterest. These flour-free brownies have been making the rounds, so I thought I'd check out this one by Scarletta Bakes, Black Bean Brownies.
The pictures looked great and the comments from readers were very positive, so I gave it a try. You don't need very many ingredients - no flour/flour substitute, and no sugar - just honey. The batter, before baking, is a soupy mess and I was a little concerned. But somewhere along the way it becomes a moist, fudgy brownie.
I had cut the amount of butter in half (I couldn't justify having 1 cup of butter in it) and I added some peanut butter on top to mask any strange tastes/textures. If I had chocolate chips, I would have added some too.
The result? Rich, moist & very tasty. I would have baked it a little longer - the edge pieces were nicer than the rest (though the boys loved it all). It would also work well in mini-muffin tins. I would also recommend that the beans get processed very well so there is no strange texture in the brownies.
Check out the recipe over here!
Definitely trying these for my gluten-free son!! Thanks!
ReplyDeleteI've made similar versions of these in the past. I'll be using this recipe next - thanks!
ReplyDeleteLooks great! I made a very similar recipe last week, but I melted some mint chocolate chips and spread them on top to give them a 'richer' taste (I can still discern the beans and the healthy aspect, otherwise...).... My favourite way of having them was how I did them for dessert one night - I warmed them up in the oven, then served with strawberries & whipped cream - they tasted like a fudgy restaurant dessert!
