This was the most. Amazing. Recipe. That I have so far tried on Pinterest. It really does taste like take-out. I will admit - it seems a little strange coating chicken with cornstarch. Why not flour? And then dredging it in egg, and frying it just until the chicken starts to brown? It looks like some sort of strange scrambled egg dish!
And then - when it all goes into the pan, and the sauce is drizzled on top - this does NOT look anything like sweet and sour chicken, people!
Every 15 minutes, you're supposed to take the dish out and stir the chicken. And something strange and wonderful starts to happen - the sauce begins to turn a delicious 'take-out' sauce colour....and it starts to thicken. And the chicken goes from resembling scrambled eggs to... perfection.
I will admit right now that I could eat the whole recipe by myself in one sitting - it's that good. Alas, I have to share with my husband and my son, and I (unlike my blissfuly unaware husband) know just how much sugar is in the sweet and sour sauce - so, I show restraint, and even put a helping in the fridge for left-overs lunch!
Don't let the strangeness of this recipe turn you off - I PROMISE you, it does not taste like scrambled eggs with chicken! (*cough*, sister) Try it! Your family will LOVE you for it. It's probably best to not make it every week, but it's certainly a dish that will impress and delight!
I found the recipe via Pinterest at Life as a Lofthouse. I'm going to send you over there for the recipe, but the only thing that I would change is the method of coating the chicken. I have a thing about handing raw chicken excessively - so I dump my cornstarch (only 1/2 to 2/3 of what the recipe cals for) into a large ziplock, cut my chicken up with my kitchen scissors right into the bag, and then (wash the hands and) shake it all up.
Then, I scramble my eggs in a small bowl and dump them into the bag, too.
I work it all in together, and then pour it into my hot and oiled frying pan.
Then I walk outside and put my chicken bag into the garbage. I don't reuse or recycle chicken plastic. I have a thing about it.
Thanks for sharing! Yes...I was a little hesitant about the egg part (I do NOT like eggs in any way shape or form on their own). But it was amazing!! We loved it, and the boys devoured it. I cut back on the sugar a bit, and we couldn't tell. It tasted great the next day, too!!
