Two {Real} Ingredient Chocolate Icing (No added sugar!)

Make fluffy Icing from melted chocolate and butter
Recipes that only call for a couple or a few ingredients are awesome, and fun, too!  However, maybe it's just me, but "2 Ingredient ________" that uses cake mix, or cookie mix, or prepared icing, is cheating - just a tiny little bit.  That's why I think that this recipe is really kinda cool.  It uses 2 real ingredients.

Butter

Sooo, while it's obviously not the 'healthiest' of icings out there, I LOVE the fact that there's no added sugar in it - because all of the recipes that I didn't use (because I didn't have icing sugar) were calling for 2+ cups of icing sugar - which is kind of a lot!  And, as my naturopath (ok, 'a naturopath that I went to once') and a couple of personal trainers and several other untitled people have told me, "Fat doesn't make you fat. Sugar makes you fat." So, I go with it.  I do love butter.  And I do love chocolate.  And I do love this icing recipe!!  I really wanted to try this recipe with coconut oil before I wrote this post, but my regular store hasn't stocked it in  while and I just forget when I'm at the bigger stores, so we've been without it in our house for almost a month now!
It's really simple.

Put the butter and the chocolate - in equal parts - into a double broiler, and melt together.
When everything has melted together into a tantalizing pool of chocolate, take it off the heat, pour it into a mixing bowl (your KitchenAid bowl, if you've got the mixer) and set it in the freezer (for 30-60 min, until mixture is thickened and no longer runny. But not solid.).
*some* little person couldn't wait until dessert time...
Once the chocolate has set, whisk on high for 8-10 minutes.  You'll start with a dark chocolate mixture and end up with a fluffy, milk chocolatey icing.  It's kind of amazing.
It's a pleasure to ice with  It's like icing with whipped cream  Delightful.  And it's not sweet, so my husband LOVES it.  And there's no (added) sugar in it, so I feel just fine and dandy letting my kids eat it - the naturopath said that butter is really good for little ones to eat.  Win-win-win!
I brought the cake. Marya made the ice cream.  Head over here, or click on the photo above for the recipe for super easy 2 ingredient banana 'ice cream'.
