Chicken Pot Pie

All of a sudden we've noticed that the air is a little cooler, the skies are crisper and bluer, and some of the trees are starting to change colour.  That makes me think of fall and warm comfort food.  So when this recipe from the Pioneer Woman showed up in my Facebook feed today, I figured that I may as well try it.

We had some cooked chicken in the fridge already, and I had a pie crust in the freezer, so it was a really quick meal.  Just chopped up the veggies, cooked them, added the chicken & chicken broth.


Covered with the pie crust and baked. 

 I mostly followed the recipe this time, except for increasing the amount of veggies - doubled the amounts that she suggested, added some frozen corn, and increased the chicken broth slightly 
Delicious!!

There were also suggestions of adding peas or a few cubed potatoes - I'd probably try the potatoes next time.  I've also done it using biscuit mix on top instead of the pie crust.

  1. Looks delicious! I've also been tempted to pull out the fall food recipes this past week! (with the exception of the last 3 days - those were too hot & humid for me!)
