This is a delicious sausage recipe that my mom used to make when we were growing up. It's kind of nice because it tastes great when it's hot, but it's also really good cold (so it would be a great addition to kids' lunches).
Dough:
1 tsp. active dry yeast
1 3/4 c. flour
1/3 c. cornmeal
1/2 tsp salt
3/4 c. shredded cheese
Filling:
1 lb Italian sausage
2 tsp. coconut oil
garlic
1 tsp basil, and oregano
1 green pepper, chopped
1/3 c. tomato sauce
1/2 tsp. pepper
Dough: Combine yeast and 2 Tbsp warm water, let stand 10 minutes. In large bowl (or KitchenAid mixer) combine flour, cornmeal, baking powder and salt, mix well. Add the yeast and milk and knead until smooth. Allow dough to rest while you prepare the rest of the filling.
I had some help with the KitchenAid mixer - for some reason he thought it was both fascinating and hilarious!
In a large frying pan, cook the onion, garlic, and peppers in the oil. Remove the sausage from casings and cook at med-high heat for about 10 minutes, breaking it into small chunks. Add tomato sauce and cook for 3 minutes or until liquid is absorbed.
Roll out dough to 15x12 inch rectangle. Spread with filling, leaving a border around. Brush the long edge with water and roll up, pinching ends together.
Bake at 350 F for about 25 minutes. Remove and add cheese on top. Bake for another 5 minutes or so.
