This recipe has been around for a long time, and has been on Pinterest in various versions. As far as I can tell, one of the orignal recipes was from this post from Smashedpeasnadcarrots.blogspot.com. Because it is no-bake, you can put any combination of ingredients in it, as long as you have the peanut butter/nut butter and honey to stick it together.
Here's the combination I used:
2 c. oats (not quick-cooking)
1/2 c. crunchy peanut butter
1/3 c. honey
1/4 c. ground flaxseed
1/4 c. wheat germ (or you can use 1/2 cup of flaxseed if doing gluten-free)
1/4 c. dark chocolate chunks
2 T. chopped nuts
1 tsp. vanilla
Combine well, refrigerate for 20 minutes or so. Then roll into balls of whatever size you'd like. Store in the fridge.
Depending on your oats, this can also be a gluten-free, dairy-free snack. You can replace the peanut butter with any other peanut butter substitute in case of allergies. It is so versatile! And a great way to sneak some extra nutrition into your kids!

Just made a delicious version of these where I added 2 T. of cocoa powder, a bit of coconut oil, and some sesame seeds. The kids don't even notice that they're eating healthy stuff!
ReplyDeleteHi! I made these over the weekend and they turned out great! I used sugar-free organic peanut butter so I needed a little more honey but they were a hit with my peanut butter lovers:) I added so much good stuff (hemp heats, chai seeds, flax) that I had to add less oats.

Hey Sarah! Glad your kids liked thim. Isn't it great to sneak all those good things in there?!! According to the original post, you can substitute any other nut butter for the peanut butter. I even used some coconut oil in my previous batch. Let us know what works!
