Since I have been raised as a fugal Dutch girl, I couldn't pass up the price of $1.77 for 10lbs of carrots! I mean, really! So I bought them, and now I have to use them! Fortunately, our kids love carrots and will eat them all day long if I let them. Heading to Pinterest, I found some other great ideas for carrot recipes!
The first thing I had to do was peel them - just get it over with quickly!
Then I used my very favourite Dollar store purchase of all time:
It cuts the carrots so easily. Much faster than using a knife, and they look cooler too! The boys love them like this, and even my husband and I noticed that we eat more carrots when they're cut like this.
I have this container in the fridge with some water in it, ready for kids to snack on when they're hungry. We also send a bunch to school in their lunches.
Then I got out my food processor. If you don't have one, get one! I was done shredding all 10lbs in 5 minutes!!
I store some in the fridge in containers, ready to use for various recipes. I also store some in Ziploc bags in the freezer, ready to add to soups and casseroles. Here are some great uses for the carrots:

You know how everyone's doing these alternate crusts for pizza (cauliflower, squash)? Well, here's a Carrot Crust Pizza! From Jo and Sue
And of course, actual Carrot Cake from The Food Zen (the best part is always the cream cheese icing!!)

If I've missed anything, please let me know your favourite carrot recipes!!
I have been craving Company Muffins lately. http://thelocalcook.com/2009/12/14/company-muffins/

DeleteThis is great! My husband and I always buy those huge bags of carrots from Costco and then we end up having to throw away some of them because they have gone bad but now I have lots of ideas of how to use them in time!
ReplyDeleteAwesome! I find the key is to just prepare a whole bunch of carrots at once (peel, then cut or grate) before they all go bad. Good luck!

ReplyDeleteThey are such a versatile vegetable, aren't they! - can be put into sweets or savoury foods. Good luck!
DeleteDon't forget "Uncle Brian's Carrot Muffins"! :) I was going to do a post about them last week. And then I burnt them to a crisp. Thankfully, the insides were still deliciously cheesy & wonderful.
ReplyDeleteUncle Brian's "Famous" Carrot Muffins, you mean. Good thinking - I'll make those this weekend for Thanksgiving. Nice to know that they still taste okay even if they burn!
