Vegetarian Zucchini Boats

I happened to get a bunch of zucchini on clearance yesterday and wanted to do something fun with it.  The kids and I searched on Pinterest and decided on zucchini boats.  (They also thought we should try to float them on water before eating them...)

I looked at a variety of recipes and settled on winging it with ingredients on hand.

It was really simple and you can alter it to fit your ingredients. 

  • Cut the zucchini lengthwise and scoop the insides out, chopping it finely.  Saute some onions and garlic in a bit of olive oil.  Add some chopped peppers, some diced tomatoes, and the rest of the zucchini.  I also added about 1/4 c. of tomato sauce and a dash of hot sauce. Let it simmer for about 10-15 minutes.

  • Fill the zucchini boats with the filling and top generously with some shredded cheese and breadcrumbs.  We also added some black olives.

Bake at 350 for about 20 minutes until the cheese is melted.

The result?  Delicious.  The kids loved them.  Even though they were vegetarian, my husband liked them because they were really filling, and spicy enough.

  1. Yum! We've been making those with some regularity, too! Though I never put the spice in them, and usually add a handful of croutons to the mixture before I stuff the boats.
